Buffalo Chicken Mac&Cheese Bites With Cashew Fruit Meat

INGREDIENTS

Cajulove buffalo chicken

  • 1 pack Caju Love
  • 3 tbsp buffalo sauce (preferably franks hot sauce)
  • 1 tsp garlic powder
  • 1 tsp onion powder

Mac and cheese

  • 4 oz Macaroni (gf if needed)
  • 1/2 cup Cheese sauce (recipe below)
  • 1 tablespoon buffalo sauce

Breadcrumb coating

  • 1/2 Chickpea flour
  • 1/3 cup non dairy milk
  • 1 tbsp buffalo sauce
  • 1/2 cup Breadcrumbs

Cheese sauce

  • 1 cup cubed Potatoes
  • 1 chopped Carrot
  • 1/4 cup Cashews
  • Half a Jalapeño
  • 1 tsp Miso paste
  • 2 tsp Lemon juice
  • 1/4 Water or non dairy milk
  • 1 1/2 tsp Arrowroot flour
  • 2 tbsp Pickled jalapeño brine
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp sea salt
  • 1 tbsp Tomato paste

METHOD

● Bring a pot of water to a boil and pour in your pasta, following the cook time on the package.
● Once pasta is cooked strain and set aside in a medium sized bowl
● In a small bowl combine all the ingredients for the buffalo chicken except the cajulove.
● Begin preparing your buffalo chicken by crumbling up one pack of cajulove into the buffalo sauce
mixture, mix together and set aside.
● Prepare the cheese sauce by chopping one carrot and cutting one russet potato into cubes.
● Bring a pot of water to a boil and toss in potatoes and carrots along with the cashews and cook
until fork tender.
● Once cooked, strain the vegetables and pour into the blender along with the rest of the
ingredients for the cheese sauce Blend until smooth
● Pour cheese sauce over your pasta and mix to combine
● Toss in your buffalo chicken and mix
● In a muffin tin lined with plastic wrap fill each mold with about a tablespoon of the mixture
● Freeze Mac and cheese bites for 2 hours or more
● In the meantime begin assembling the coating
● In one small bowl combine chickpea flour, buffalo sauce, and non dairy milk. Mix to combine
● Pour breadcrumbs in a separate bowl
● Preheat oven to 400F
● Line a baking sheet with parchment paper
● Once frozen gently remove bites from the tin
● Dip bites in wet mixture and then the dry. Place on baking sheet
● Once all coated cook for 20 minutes or until golden brown
● Dip in vegan ranch, aioli, or for extra heat more buffalo sauce
