Chicken Ceasar Salad With Cashew Fruit Meat
INGREDIENTS
Chicken
● 1 pack of Caju Love
● 1/2 cup cassava flour or gf flour
● 1/2 cup bread crumbs (gf if needed)
● 1 tsp garlic powder
● 1 tsp onion powder
● 1 tsp “chicken less” seasoning or poultry seasoning
● 1/2 tsp chili powder
● 1/4 tsp celery salt
● Pinch cayenne
● Salt and pepper
● 1/3 cup water (add more if too thick)
● 2 cups chopped lettuce
Croutons
● 1-2 slices bread cut into cubes
● Butter
● Oregano
● Salt and pepper
Dressing
- 4 Tbsp vegan mayo
- Juice of half a lemon
- 3 garlic cloves minced
- 1 Tbsp vegan Worcestershire sauce
- 1 Tbsp vegan Parmesan
- 2 tsp dijon mustard
- 2 tsp capers
- Salt and pepper
METHOD
● Break up one pack of caju into chicken like pieces in bowl
● In a small bowl mix all ingredients together besides the breadcrumbs and lettuce
● In a separate bowl add breadcrumbs
● Pour batter mixture over the caju chicken and toss to evenly coat
● Add in your breadcrumbs and toss once more
● On a non stick pan cook chicken until golden and crispy
● Coat two slices of bread with butter, oregano, salt and pepper
● Cut into cubes and toast in a pan until crispy
● Chop up lettuce
● To prepare the dressing add all dressing ingredients to a bowl and mix to combine
● Assemble your salad beginning with chopped lettuce, caju chicken, bread crumbs, parmesan cheese, and dressing
● Enjoy every last bit!
