Plant based Quiche with Cashew Fruit Meat
- 1 box firm tofu
- 1 bag of cashew meat
- 2 cups of any veggies you have in your fridge
- nutritional yeast
- spices of choice ( we used garlic, salt, pepper & rosemary)
- pie crust ( this one was bought)
- Preheat oven to 375F
- Blend tofu with 1/2 cup of water and the nutritional yeast until smooth.
- In a pan sauté the cashew meat with the veggies and spices.
- Mix it all together and pour in the pie crusts.
- Bake for 35 min
